What's the difference between black tea and green tea?
In reality, black tea and green tea both come from the same plant.
The difference lies in their rate of oxidation: one undergoes complete oxidation and therefore has more robust flavours, while the other is less processed and has a delicate, grassy taste.
In the footsteps of the past...
China is the cradle of black tea.
It first appeared towards the end of the 16th century with Lapsang Souchong, created in the Wuyi mountains. In the Middle Kingdom, it is known as "red tea" because of its particularly coppery colour when brewed. Apart from China, India (particularly the Assam and Darjeeling regions, as well as the island of Ceylon), Kenya and Vietnam are renowned for their black tea cultivation.
According to the most famous legend, green teas were brought by boat to Great Britain.
After the long sea voyage, the leaves oxidised and turned black.
What a surprise it was for the English when they opened their cargo!
