Yellow tea from Huoshan, in the province of Anhui in China. This tea is made from the bud and the first leaf, and is produced with an additional stage called "sealed yellowing", a process of slow oxidation of the tea's polyphenols. This particular stage gives it its yellow colour and velvety liquor. It develops flavours of roasted chestnuts and almonds with lightly iodised vegetal notes.
