A liquor with clear notes of bergamot and lemongrass, with a sweeter note of carob. Once upon a time the daughter of a certain Lady Grey amused herself by comparing the size of her mother’s diamonds to carob grains removed from her favourite tea. This made the guests laugh and inspired a diamond dealer – and that’s where counting diamonds in carats came from! Because she wasn’t yet completely a Lady, the name of mi-lady Grey was given to her favourite tea in her honour. (White and green teas, bergamot, lemon, lemongrass, orange, carob, rose and cornflower petals.) Brewing instructions: 3 to 5 minutes. Water at 85°. 1 teaspoon per cup. T1
