To produce Izumi No Shiro matcha, the best quality of green shade teas are used, ground into a fine powder with a grindstone. This tea comes from the early spring harvest in Wazuka Town in Uji in the district of Kyoto. This high-grade matcha intended for the “cha no yu” Japanese tea ceremony produces an intensely vegetal cup (buttered spinach, seaweed) with a great deal of substance.
